Mid-Week Dilemma

This morning, I made some homemade honey peanut butter in my FFB . It is delicious, and quite possibly my easiest recipe ever! Admittedly, I have not a clue how this would turn out in a "normal" blender, and quite frankly, wouldn't want to try. I do know that it cost me $4 for a huge jar of Planter's Honey Roasted Peanuts and I made 3 cups of peanut butter with only 1 cup of peanuts, and a teensy drop of oil and it has no added stuff...just good old peanuts.

BB's new lower carbohydrate diet is really throwing a wrench in my gears...It's really difficult to make yummy food that isn't full of refined sugar or super refined flour...I know, I know, search online, there's a ton of stuff...that's not the issue. The issue is for me to be able to cook food that BB will actually eat...he is the pickiest eater in our house. Granted that doesn't mean much in the grand scheme of things. Take last night, for instance...I made brown rice. According to the directions on the package. No added nothing. SO...when it was all cooked, it was rather bland (not that rice is flavorful without help anyway...). I told him before he took a bite that it was bland, and if he wanted, I had some things he could add that would taste good with the meat we were eating...he said no, and then proceeded, over the course of the next 30 minutes to complain about how bland the rice was. SO...my challenge this week is to find snacks that are low carb, but yummy, and find ways to make low carb desserts...any ideas????
